The construction material and temperature capability work hand in hand. Often a cotton blend will only go up to 300 degrees or so, which isn't going to be enough for hot ovens. It's fine for a sandwich shop and you're taking melted sandwiches out of a conveyor. Otherwise, though, you'll want to consider a heavy cotton terry blend or silicone, that are often designed to go up to 500 degrees, which means you're covered no matter what you're taking out of the oven.
When you buy industrial oven mitts, you can buy them virtually anywhere. Look online, in catalogs, or in a retail store, just pay attention to how hot they can get so that you protect yourself and your employees.
